HONEST TO GOODNESS 
AUTHENTIC ENGLISH CHIPS
(a.k.a.  fried potatoes)

NOTE:  Tony Vowell sent me the recipes for Scotish Splat Frisbee and Scotish Coronary on a Stick.   Both of them go best when served with honest to goodness authentic English chips.  Tony kindly sent along a recipe for them that sounds fantastic.  Unfortunately, due to this damn low carb diet I'm on, I'll have to save trying them for a cheat day.  Tony writes: "The chips are the real deal and I have yet to find anywhere in the US that can do them to the standards of the UK.  In fact there are inummeable styles and standards over here too."

Here's just one of them...

INGREDIENTS:

  • Potatoes, (bigguns)
  • A deep fat fryer, preferably a beef fat fry but you could use a lesser oil-based fry if you don't want true English authenticity 
PROCEDURE:

Cut your potatoes into thick 1/2 inch by 4 inch slices.  Dunk them in the frier and fry until they are just about to color up, then take them out and allow them to completely cool.  Once they are cool and your oil is hot again, dunk the potatoes back in and fry until they are golden brown.

Serve with salt and malt-vineagar.
